The Mojito is a traditional Cuban cocktail that dates back as far as the 1500’s. Legend has it that Sir Francis Drake created the drink when he combined rum, sugar, limes and mint to help his men who were suffering from scurvy. Ernest Hemingway made the drink famous when he discovered it on a trip to Cuba; it quickly became his favorite drink. Whatever its origins, the mojito is still a popular and refreshing drink today.

Ingredients:

1 small bunch mint leaves
1 lime slice
2 oz Cuban light rum (or other white rum)
½ oz simple syrup
¾ oz freshly squeezed lime juice
Club soda
Additional lime slices and mint for garnish

In a highball glass, muddle the mint leaves and lime slice to release the flavors. Add the ice,rum, simple syrup and lime juice and stir to combine. Top with club soda and garnish with aslice of lime and a sprig of mint.
