This classic French cocktail dates back to World War I, and is said to have packed such a punch that it felt like being shelled with the powerful French 75mm field gun. However, a well concocted version should be balanced and refreshing. 

Yields 1 cocktail

Ingredients:

1.5 oz Highclere Castle gin
¾ oz simple syrup
¾ oz freshly squeezed lemon juice
3.5 oz Champagne, prosecco or sparkling wine
Garnish with a lemon peel (optional) 

Pour the chilled gin, simple syrup and lemon juice into an ice filled cocktail shaker. Shake vigorously and then strain into a champagne flute. Top with the champagne and garnish with the lemon peel.
