I prefer to make Carajillos with Cold Brew Coffee, because I find that this method showcases best the coffee’s wonderful and vibrant aromas. However, for people who prefer to compensate the Licor 43’s sweetness with more bitter notes, you can substitute the Cold Brew Concentrate with a shot of Espresso.

Ingredients:

3 oz Cold Brew Concentrate
2 oz Licor 43
Orange Rind / Orange Wedge
Coffee Beans

In a Negroni glass add 1 large ice cube. If not available, substitute for several normal ice cubes.  A large ice cube will simply keep the beverage cool, while diluting the beverage less.

 Pour 2 oz of Licor 43 over ice and then 3 oz of Cold Brew Concentrate.  

For extra aroma and garnish, grate orange rind and/or coffee beans on top.  Or simply lightly squeeze an orange wedge and add to the beverage.  Or you can also add a dehydrated orange wedge.

Cold Brew Concentrate Recipe

1 part (100 g) Coffee – finely ground
8 parts (800 g) Water – fresh and at room temperature

Start by using a fresh and delicious coffee.

Pour coffee into a jug or glass.  Then add half the water.  Stir well with a wood or plastic spoon.  Then add rest of the water and stir again briefly.  Put a lid over the glass and place in the refrigerator for 12 hours.  For more concentration, leave in fridge up to 24 hours.

After extraction period, take the solution and pour slowly through a coffee paper filter, being careful as to not pouring all the coffee grounds into the coffee paper filter.  

This coffee concentrate can be kept refrigerated up to 7 days.
